Bhindi Masala Recipe: Today I am going to show you a very nice bindi masala which is a semi gravy that goes very well with your chapatis. So let’s get started and check out the recipe. I have taken about 250 gms of ladies finger, wash them, pat them dry, cut off the head and the tail and cut the ladies finger to about 1 and 1 half to 2 inches in size. 

Take a pan, add 2 tbsp of oil. Add the ladies finger to the pan. Fry the ladies finger till they are completely cooked and they have a nice golden brown colour to it. When the ladies finger is 3-4th cooked, season it with a little salt. I am taking 1-2 tsp of salt. With the ladies fingers fried, remove from the pan and keep it aside. To the same pan add 2 tbsp of oil, add whole spices, bay leaf, cinnamon, cardamom, cloves, a piece of maize. 

Now, let’s add 2 medium sized onions finely chopped. this add one large green chilli finely chopped to this add 2 teaspoons of finely chopped garlic 2 teaspoons of finely chopped ginger. Saute the onions till they are nice and brown. Take 3 small tomatoes and puree them in a mixer jar. 

Once the onions are nice and brown, add the tomato puree. the masala till all the extra moisture is evaporated and it forms into a nice dry paste. All the excess moisture is evaporated now I’m going to add the spice powders. Add quarter teaspoon of turmeric powder, 2 teaspoons of chilli powder, 1 teaspoon salt, 1 teaspoon cumin powder, 1 teaspoon coriander powder. Mix it well for 2 minutes. Take half cup of curd whisk it nicely. 

Then add the whisked curd. After adding the whisked curd mix it well. Once the oil separates pour 1 cup of water. Now add the fried ladies finger pieces to the gravy. After adding the ladies finger add 1 tsp of garam masala, 1 tsp of sugar, this is to just balance the flavours. Add some chopped coriander leaves, keep the flame on medium. 

Close the pan and cook for 10 minutes. Finally finished off with some crushed Kasuri methi. Turn off the stove. The Bindi Masala is ready. Serve it hot. So hope you enjoy this delicious Bindi masala. It’s very nice. You can also have it as a lunchbox recipe.
