Ingredients:
- 4 beef shanks (about 2 pounds)
- Salt and pepper
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 sprigs fresh thyme
- 2 bay leaves
Instructions:
- Preheat oven to 325°F.
- Season the beef shanks with salt and pepper.
- Heat the olive oil in a large Dutch oven over medium-high heat.
- Add the beef shanks and brown on all sides.
- Remove the shanks from the pot and set aside.
- Add the onion and garlic to the pot and sauté until softened.
- Return the shanks to the pot and add the beef broth, red wine, thyme, and bay leaves.
